Vinification: Manual harvesting in 20 kg perforated crates. Gentle destemming and crushing of the clusters. Alcoholic fermentation in stainless steel tanks at a controlled temperature of 25°C. Maceration for approximately 10 days with pump-overs and délestage.
Malolactic fermentation: Completed
Aging: Approximately six months: 50% in amphora, 35% in stainless steel, 15% in barriques
Bottle refinement: At least 8 months
To the eye, it presents a bright ruby red color with garnet reflections.
The olfactory sensations reveal a great richness of aromas that foreshadow the “playfulness” of the vinification: typical varietal notes of crunchy red fruits, spices such as white pepper and cloves, and aromatic herbs that embellish the bouquet.
On the palate, it is fresh and pleasantly tannic, with elegance and complexity. The classic Grignolino structure is recognizable but enriched by sensations that make it both intriguing and persistent.
An ideal pairing with traditional Piedmontese cured meats or complex dishes such as a rich pumpkin and sausage risotto.
